Unfreeze your chicken livers.
Butter to room temperature.
Finely chop your onion.
1lb of chicken livers
1 small onion
1 clove of crushed garlic
1 T of chopped fresh thyme (dried works fine as well)
3oz of fresh cream
Salt and Pepper
In a large frying pan, melt half the butter over medium heat. Add onion & garlic and cook over low heat until soft and transparent but not brown.
Add livers and thyme, then stir over moderate heat until they change colour (about 5-7 mins). Remove from heat.
Place livers and liquid in a food processor and process until smooth. Add other half of butter (at room temperature) and cream, season with salt and pepper, and process until just incorporated.
Spoon into a glass jar or porcelain dish, smoothing the surface. Cover and refrigerate until firm.
Livers are one of THE most nutrient dense foods on the planet, which makes them perfect for woman trying to conceive. Just a small amount of liver gives you over 50% of your nutrients for the day - this stuff is potent!
Given that most people can't stomach livers on toast, or a slab of liver on the BBQ (myself included) one of the most painless ways to eat liver is made into pate. You can use beef, duck or chicken liver for this pate, but it must come from a grass fed cow. The healthier the animal, the more nutrient dense it's body organs (okay ick, promise I own't refer to body organs again).
Why is it so good for pre-conception? Liver is high in ALL the B vitamins, especially Folate (which contributes to proper reproduction function and fetal development), also key minerals like zinc, selenium and iron.
I LOVE this pate, and I try to eat some every week. My fav is with a little fig jam on home-made gluten free crackers, which reminds me I need to post my recipe for gluten free crackers next. Enjoy!
